In the previous article, we covered the different uses for the pulp leftover from juicing, and how it can be used to make healthy, natural, preservative-free crackers. The following recipe and slideshow will show you how to do exactly that. Please note that if you have a centrifugal-style juicer, you might need to run your vegetable pulp through a food processor first to get the pulp finer and consistent in size (the pulp in the slideshow came from an augur-style juicer, an Omega VRT).
Veggie crackers are simpler to make than you might think. The hardest part is deciding on the combination of veggies and spices you’ll be using; once you’ve decided, the rest is easy (and you can follow the slide show if you get stuck).
Veggie Pulp Crackers
- 5 (liquid) cups veggie pulp (carrot, kale, beet, etc. and preferably organic)
- 2 (liquid) cups water
- ¼ cup white miso paste
- 1 cup ground flax seed meal
- ¼ cup soy sauce or liquid aminos
- ¼ cup wheat germ
- 1/3 cup nutritional yeast (optional)
Mix the soy sauce/aminos into the miso paste with 2/3 cup water and spices. Add remaining water to flax seed, stir well, and set aside to hydrate. When the flax has absorbed the water, add it to the veggie pulp, along with the miso and soy slurry. Mix well. Pat the veggie dough into a single layer on two well-oiled, nonstick baking sheets, and score lightly into cracker-sized squares.
Bake at 300 degrees for 45 minutes, then reduce the heat to 200 degrees for 1.5 hours. Check occasionally for dryness while baking, and flip the crackers over to allow the other side to dry completely. Store in an airtight container when cooled.
You can also dehydrate these crackers on silpat or parchment sheets at 115 degrees; dehydration time depends on the thickness of the crackers, however.
The recipe is really flexible, and is only limited by your imagination. You can change the veggies and spices as you see fit. Want Indian style carrot crackers? Add tumeric and other Indian spices. Barbecue style beet chips? Add a barbecue spice blend. Desire a sweet cracker instead? Use beets, apples, pears, and honey and cinnamon instead of miso and soy sauce (make sure you write down your new recipes so you can duplicate your success). Get creative, snack healthy, and don’t waste that pulp!
