Turkey soup recipe: Substitute this pasta for noodles to make it amazing

Eating turkey soup makes everything feel right with the world. Nothing warms you from the inside out like a good bowl of steaming and comforting soup. This turkey soup recipe is perfect whether you make it with turkey or chicken. It’s delicious, filling, and is downright wonderful with a great loaf of crusty bread.

Tortellini is a ring-shaped pasta filled with meat or cheese. You can purchase it in nearly any store that sells pasta in the refrigerator/freezer section. It can be used in many different capacities, as it has a lovely thick texture. For this recipe, the cheese filling is the best choice. It adds just the right taste to the other ingredients in the soup.

If you are using uncooked chicken or turkey, place the raw poultry in a large pot, add water and bring it to a boil. Lower to simmer and cook for 25 minutes, or until done. Remove from the pot – retain the water (as this is your broth). Cut the chicken or turkey into bite-sized pieces. If your chicken or turkey is already cooked, you can purchase chicken broth (usually in the soup section of a grocery store).

Turkey Soup Recipe

Ingredients for making Turkey Soup:

  • 4 quarts chicken broth
  • 1 ½ cups celery, sliced
  • 1 ½ cups carrots, sliced
  • 2 tablespoons sugar
  • 4 bay leaves
  • Garlic powder (to taste)
  • Salt (to taste)
  • Pepper (to taste)
  • Rosemary (to taste)
  • 4 cups chicken or turkey, cooked and cut into bite-sized pieces
  • 1 small bag frozen tortellini (filled with cheese)
  • Fresh cilantro, chopped (optional garnish that is really yummy)

Directions for making Turkey Soup:

In a large pot, put in the chicken broth, celery, carrots, sugar, bay leaves, and other herbs and spices, to your specific taste (except for the cilantro). Bring to a boil, then lower to simmer. Cook until the vegetables are tender (15 minutes or so). Add the cooked turkey or chicken pieces. Then add the tortellini and cook only as long as indicated on the back of the package (usually about 5 minutes or less).

Serve with chopped cilantro as a garnish, if desired, and a loaf of warm bread.
