I’m sure some of you were fortunate enough to get a new microwave oven for Christmas. If you were a previous owner, then you already know what a lifesaver they can be in the kitchen. If you’re new to using a microwave, then you have a real treat in store as to the time it will save you when you’re preparing food.
Many of us tend to use the microwave only for making popcorn, reheating leftovers or making tea or coffee. Some cooks believe that foods cooked in a microwave don’t turn out as well as they would in a conventional oven. In some cases, this is a true statement. However, there are many recipes designed for use in a microwave that do turn out very well. By doing a Google search on the Internet, you can find many good and reliable recipes that were developed using a microwave. There are also microwave cookbooks available that can provide you with more suggestions for getting the best use from your oven.
You still may be in the mood to do some baking here at the holiday season. I’m passing along a recipe that would be great for using your microwave, which is for “Cinnamon Sauce Cake”. This cake is a very easy recipe. In fact, it’s so simple, even a young person learning how to use a microwave could make this one. This is a cake that has plenty of cinnamon syrup to go with it. It’s full of cinnamon flavor, you best like cinnamon to try this one! This could even be served as a breakfast coffeecake. It also would be a good dessert, served with ice cream or whipped cream on the side.
I’m also including the conventional directions, in case you don’t own a microwave or would prefer making it the conventional way. There are only a few adjustments in the recipe that need to be made, as well as the preparing of it. Either way it’s made, any fan of cinnamon would enjoy it.

CINNAMON SAUCE CAKE
- 2 cups all-purpose flour
- 1 cup sugar
- 3/4 cup milk (conventional: 1 cup)
- 2 tablespoons butter, softened
- 1 teaspoon baking powder (conventional: 2 teaspoons)
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped nuts
- 2 cups firmly-packed brown sugar (either light or dark)
- 3 tablespoons butter, melted
- 1 cup hot water (conventional: 1-1/2 cups)
Microwave directions: Beat together the flour, sugar, milk, 2 tablespoons butter, baking powder, cinnamon and salt until smooth. Pour batter into a microwavable ring dish or a microwavable Bundt pan. Sprinkle chopped nuts on the top. In a four-cup measuring cup, combine brown sugar, melted butter and hot water, stirring to mix. Cook on HIGH power for 3-4 minutes or until boiling. Carefully pour over the top of the batter. Bake on HIGH power for ten minutes, rotating the pan after five minutes (if you microwave has an automatic turntable, then no rotation is needed). Let stand on a flat surface for five minutes before serving. Serve warm.
Conventional Directions: Mix the same was as in Microwave directions. Combine the brown sugar, butter and water in a saucepan and bring to boiling, stirring constantly. Pour sauce over the top of the batter. Bake at 350 degrees for 35-40 minutes.
