Innovative Dining Group (IDG) wanted to add another restaurant to their growing portfolio – Sushi Roku and BOA Steakhouse to name a few. During a visit to Southern Italian, IDG fell in love with the food and wanted to share this cuisine. Named after a town in Southern Italy, Soleto Trattoria and Pizza Bar opened to the public in July 2012. The interior was chic-industrial with exposed beams, reclaimed wood floors, white wash brick walls – very warm and welcoming. You already know you in for a relaxing, no fuss good time. The service is very attentive and friendly.
Ricotta Bruschetta mixed with honey and topped with pink peppercorns. These morsels on the happy hour menu are scrumptious! They are almost like mini pre-desserts. The ricotta was super fine and creamy like goat cheese. Yet, the texture was a lot lighter than goat cheese. The peppercorn and honey played very well together. Thumbs up, way up!
Flash Fried Calamari is served with grilled lemon and sauce duo. It was lightly battered with a little kick. The calamari was tender and flavorful. The rooster sauce aioli was creamy and garlicky. The marinara tasted very fresh like fresh tomatoes not too sour and not too sweet, just right. Thumbs up!
Grilled Oyster Mushrooms served with grana padano, white truffle lemon vinaigrette. The mushrooms were grilled to perfection imparting a nutty, woodsy flavor. The grill also gave the mushrooms a char grilled, smoky flavor. The grana padano cheese matched perfectly with the mushrooms. The white truffle lemon vinaigrette was subtle but lends a refreshing flavor while letting the mushrooms shine through. These would also be great tossed with pasta. Thumbs up, way up!
Caesar tossed with romaine, parmesan crisps, grana padano and topped with sautéed garlic shrimp. I’ve been waiting for a restaurant to make an in-your-face Caesar dressing since Jimmy’s in Seal Beach closed a few years back. Soleto has the #1 Caesar dressing in SoCal! The dressing is made in house and screams with a strong Caesar flavor. The grana padano is so much better than parmesan cheese. The sautéed garlic shrimp were sweet and plump. The calamari would also be a good match for this salad. Thumbs up, way up!
Chopt’ Italian is tossed romaine, fennel salami, pepperoni, mortadella, mozzarella, provolone, tomatoes, garbanzo beans, pepperocini, artichoke, olive and Soleto vinaigrette. This was a great salad – fresh, crisp, and perfectly balanced flavors. The vinaigrette was light and let all of the ingredients stand out on their own from the fennel salami to the garbanzo beans. The bread crumbs were a nice touch! A glass of Pinot Grigio would be perfect with this. Thumbs up, way up!
Potato & Bacon Pie is fontina cheese, garlic cream, scallions, and thyme. This pizza would be perfect for brunch. All of the flavors of breakfast – bacon, potatoes, and you can even order it with an egg on top. The garlic cream sauce was perfect and pulls all of the ingredients together. The potato wedges were a little big and might work better with smaller wedges, slices or cubes to evenly disperse the potato, otherwise perfectly executed. The crust was one of the best I ever had! It was like a flat French baguette – good crisp crust on the outside and chewy and airy on the inside. Thumbs up!
Orecchiette Diavolo is house made spicy sausage, rapini, and chili flakes. The pasta was cooked al dente and flavorful. The sauce was light and not overbearing to let the spicy sausage and rapini shine. The sausage was hearty and slightly spicy. The rapini added a sweet and slightly bitter flavor. I could not stop eating this! Thumbs up, way up!
Pumpkin Ravioli served with beech mushroom, hazelnuts, and sage. The ravioli were al dente with a sweet & savory pumpkin filling, almost like pureed butternut squash. The mushrooms added a meaty texture while soaking up the flavors in the sauce. The hazelnuts added a crunchy texture yet adding a decadent flavor. Thumbs up, way up!
Branzino Milanese is served with arugula, lemon, and grana padano. The branzino was breaded with asiago bread crumbs added a robust cheese flavor. The arugula salad enhanced the branzino flavor by showcasing the succulence of the fish. Thumbs up!
Tiramisu is one of the best I’ve ever had. It was fluffy and light. The lady fingers were soaked in really good espresso for an intense coffee flavor rush. The mascarpone was fluffy and creamy! Eccellente! Thumbs up, way up!
